It has been calm here. Life is taking over, important changes are about to come and unfortunately, I am not able to bake and post as much as I like. I hope you come back from time to time anyway. I am sure, I will be able to post more regularly again in the future. But sometimes I still manage to sneak in a relaxed feeling which enables me to produce something neat. Sparkling cranberries are straight from 101cookbooks and I fell in love with this easy treat last year. And I decided these will become a regular each year, no matter how complicated life is. So let’s pull it together and have a look at the super simple recipe. NOTE: these are quickly done, but you will need to allow for some resting time over night.

Life is complicated right now. Thus, I am listing 5 good things here to motivate positivism:

  1. Valeria made marquesa de chocolate, (a recipe from Venezuela which is similar to the German Kalter Hund) and sent me a beautiful picture. Now it is my turn to try a German version of this recipe. We will post both versions here once I managed to make it. Thank you so much for this challenge Valeria.
  2. I am glad I found purplefoodie. I visit her blog and just awe at all the goodness there. And I am glad she likes it here, too.
  3. Nearly all my best friends were here this weekend and spent a lovely time with me. Nothing beats that, especially during complicated times.
  4. December 3 will be a date that marks changes to come. Good ones.
  5. This recipe is dead easy and its taste just fits perfectly to those times where falls turns into winter.

I haven’t been able to post a recipe in a while which makes me feel bad because I actually baked a lot: German cheesecake, apple almond paste bundt cake, with buttermilk cheesecake-chocolate squares and so on. But I haven’t managed to sit down quietly enough to write them down. So many things are happening right now. Complicated ones but also many good ones. Exciting times. I hope you cope with me and come back from time to time anyway. I am still around and I am happy if you come by and try one or the other recipe.

This particular recipe is actually a substitute for one I couldn’t find: Here in Germany we have a cake called Kranzkuchen (literally: ring cake) made from yeast dough filled with almond paste and raisins, topped with a sugary drizzle of frosting. But no recipe to be found – nowhere. Probably all the grandmothers baking these cakes don’t use the internet. And I haven’t found a recipe in any of my cookbooks either. Hm. But this one here comes close and is as yummy. It’s from Leila Lindholms a piece of cake. I varied it by substituting bread flour by all purpose flour and sugar by muscovado. Its a perfect treat for these dark days coming up.

Cranberry time! Yap. I am proud to report that the first fresh cranberries are available in the right now. Run, stock up on them – soon they will be gone – as suddenly as they appeared!

What’s wrong with her,  you may wonder. Well – I live in Germany, and cranberries have just made their way here the latest years. And they don’t come in droves. So anytime I see one of these packages – I just need to buy it.  When I managed to grab a package yesterday I immediately had to combine them with this delicious fudgy brownie recipe I had tried two weeks ago. And I was lucky. They turned out oh so sweet. I brought them to work (my co-workers are my secret testing animals – I analyze the time it takes until all crumbs are gone – no just kidding). Anyway, these were gone so quickly.

I wasn’t able to take decent photographs that quickly – I always have a hard time photographing brownies. Does anyone have tips and hints for me? The colour is hard to capture and I have simply no ideas on how to arrange them nicely. Well, anyway, here comes the recipe which is you will get done in no time.

donauwellen // danube waves

Donauwelle (danube wave)- a classic German cake with morello cherries, butter creme and cocoa. Butter cream? Oh oh! Its contains two layers of batter: a white and a dark one. Actually this cake is sometimes also called Schneewittchenkuchen / Snow White Cake, probably because of the combination of colours: white, black and red. Neat. But why this is mostly called Donauwelle? I have no idea. Yes, there is a wave-like pattern, but why attribute it to the Danube? Well, one thing is for sure – this cake is very yummy indeed. Very heavy, too.

This is why you will find here a variation of the cake: I let go of the butter cream layer completely. And the result may not be called a Snow White Cake – or Danube Wave any longer, but maybe the little sister or nephew. And it is very easy to make and requires not many ingredients.

I could have drowned in awesome bagels in the US. As a matter of fact, the bagels at Scratch were better than any bagel I had before – anywhere. Once home I knew I had to figure out how to make bagels myself, as bagels are rare (well not so rare but they are not that common) to find in Germany, and if you find some they’re usually not very good. This is the first try at a yeast bagel recipe. I will try sourdough bagels soon, as this – and lye – are probably the secret to Scratch’s bagels.
