It has been calm here. Life is taking over, important changes are about to come and unfortunately, I am not able to bake and post as much as I like. I hope you come back from time to time anyway. I am sure, I will be able to post more regularly again in the future. But sometimes I still manage to sneak in a relaxed feeling which enables me to produce something neat. Sparkling cranberries are straight from 101cookbooks and I fell in love with this easy treat last year. And I decided these will become a regular each year, no matter how complicated life is. So let’s pull it together and have a look at the super simple recipe. NOTE: these are quickly done, but you will need to allow for some resting time over night.

svensk ananas paj (swedish pineapple pie)

A juicy treat which is ideally served at dark cold nights with a strong cup of coffee and a decent amount of whipped cream or vanilj visp. This is a swedish recipe, or at least I obtained it via a Swedish lady. It is so easy to prepare, I nearly feel ashamed to post this recipe. My notes barely included 2 lines of instructions. But I did extend them a bit as you will see. As far as the amount of pineapple goes: I have tried to translate the 2 Swedish cans by heart (because it had been a while that I had seen the Swedish cans) to German cans, and this is what I ended up with. A big German can of pineapple weighs 800g, but nearly 400g of this is pineapple juice. So two – or a bit less will do – amounting to 400g of pineapple. So please bear with me and adjust the filling if you need to.

Sunny peach streuselkuchen

Waking up to a Saturday weather doing its best at being cold and grey, and then sunny and windy, and then grey, stormy and rainy calls for a cake which is juicy and fruity and lifts your spirits. Even better if your local farmers market carries organic peaches. Basically this one is a variation of a German Streuselkuchen (which you can find filled with pudding, not filled, filled with any fruit). It lifts your spirits because a Streuselkuchen does, but the peaches -  the peaches -  really add a twist which make you go smile and feel sunny – even if the weather remains.
